Some cravings are simple. Some ask for patience.

I travelled nearly 570 kilometers from Bengaluru to Guntur just to eat authentic Malpuri at Subhani Malpoori. It may sound dramatic, but some tastes stay with you long enough to make the journey feel completely justified.

My cousin took me there. When we arrived, they were just setting up the counter. The ghee was heating slowly, the batter was being prepared, and the first batch had not yet gone in. For a moment, I thought we were too early. Instead of leaving, I chose to wait.

Around 30 minutes.

Watching everything being prepared from scratch made the wait part of the experience. There is something different about seeing food come alive before it reaches your hands.

Then it began.

The batter was gently poured into hot ghee. Each Malpuri slowly puffed up and turned golden at the edges. The sound of frying in pure ghee and the aroma filling the air felt comforting and familiar. There was no rush. Just heat, timing, and skill.

Once lifted out, still piping hot, they topped it with fresh kova. It began melting instantly. The first bite was unforgettable. The outer layer was crisp and slightly caramelized. Inside, it was soft, airy, and warm. The richness of ghee came first, followed by the sweetness and the creamy texture of kova.

What makes it special is not just the sweetness. It is the freshness. You can taste that it has just come out of the ghee. That warmth and texture cannot be recreated once it cools. It has to be eaten right there, right then.

There was no fancy presentation. Just a simple counter, fresh Malpuri, and people waiting patiently for their turn. Somehow, that simplicity made it even better.

Some food is about luxury. Some food is about memory.

This Malpuri was about authenticity. About waiting without complaint. About experiencing it exactly the way it is meant to be eaten, hot, fresh, and uncomplicated.

For me, Savours is not always about fine dining or expensive restaurants. Sometimes it is about travelling miles for a simple dish and realizing that the first bite makes the entire journey feel small.

And this one truly was worth it.
